Taco Chicken Packets

I love packet cooking. It is so nice to not have a bunch of dishes to clean up. We do it a lot in the summer because it is perfect for grilling. Of course here in NY it isn't quite grilling season yet so I did these in the oven. They still turned out really yummy. I got the recipe from the Kraft foods website. Check them out. They have a ton of yummy recipes.

Taco Chicken Packet

4 chicken breasts (about 1 lb total)
1/2 lb red potatoes sliced really thin
4 tsp taco seasoning
1/2 cup salsa
3/4 cup Mexican blend cheese
4 large pieces of aluminum foil

Preheat oven to 400 degrees. Lay out all four pieces of foil on table or counter. Spray lightly with non stick spray. Place potato slices evenly on each piece of foil. Place chicken breast on top. Sprinkle 1 tsp of taco seasoning on each chicken. Distribute salsa evenly into all four packets. Sprinkle cheese over top. Create packet out of foil by pulling up long sides and crimping them together. Make sure that you leave some space between the top and the food or it will stick and burn. Gather up the small ends and crimp tightly. You want to make sure that there aren't any holes. Place on baking sheet and cook for 30-35 minutes or until chicken is done. Let cool a few minutes and enjoy.
